On May 18th, Buffalo Wild Wings® will donate 10% of all pre-taxed food sales (less alcohol and promotional discounts) from any guest that presents a fundraising ticket at the 6925 Mills Civic Pkwy location between the hours of 6pm to 9pm to The Leukemia & Lymphoma Society.

You’ve gotta eat supper so it’s a win win situation! Together, we can make a positive impact and help keep our community working and playing together. The Wind in the Willows by Kenneth Graham

On my quest to find my way back to my first true love, reading, I chose to read The Wind in the Willows as my starting point. I found it surprising that my husband had read the book once upon a time during his childhood but I had not. I rather enjoyed the stories of the four animal friends – mole, rat, badger and toad. They certainly led care free lives basking in the summer sun, which I wish I could live that way but it’s only a story.

I’ve recently turned 25 and upon doing so realized that I don’t read as much as I use to. Growing up I always had a book in hand. In order to get back into reading I have set myself a task to read 15 of the books on the following list 30 Books Everyone Should Read Before Their 30th Birthday.   I know it’s not a best seller list or anything of that sort but it looked like a good collection of books to read at this time in my life. As I finish books I’ll post about them. If you have any suggestions of others I should read feel free to list them.

Week 12 Update:

At the recommendation of my training coach I took this week off as well including the weekends long run. To put it simply – I am not happy. I feel like my past 3 months worth of training is going down the drain. My hope is that I’ll be able to complete the Drake Half Marathon next week and continue on with training. Regardless I do need to meet my fundraising goal. Your donation is tax-deductible and NO DONATION IS TOO SMALL. Keep in mind that The Leukemia & Lymphoma Society is a great organization. How To Win Friends and Influence People by Dale Carnegie

I’m not one for self-help books but since it was on the “list” I figured I’d better read it. This is one of the first bestselling self-help books ever published. I thought that most of what the book said was common sense but it must not be too common as someone had to write it down in a book. At the end of each chapter there was a sentence or two that summarized that section up. I’ve included them below for those who don’t have time to read the actual book.

  1. The first step toward success is identifying your own leadership strengths.
  2. Communication is built on trusting relationships.
  3. Motivation can never be forced. People have to want to do a good job.
  4. There’s nothing more effective and rewarding than showing a genuine interest in other people.
  5. Step outside yourself to discover what’s important to someone else.

Mozzarella Sticks

Mozzarella Sticks

Ingredients

1 1/2 cups Italian-style dried breadcrumbs

1 1/3 cups freshly grated Parmesan
1 teaspoon salt
2 (16-ounce) blocks pasteurized mozzarella cut into 4 by 1/2-inch sticks
4 large eggs, beaten to blend
1 1/2 cups vegetable oil
4 cups Marinara Sauce

Directions

Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Serve with the Marinara Sauce.

Week 11 Update:

Well the major update is that I can walk with very little pain after taking a week  off. This week I was suppose to run 10 miles and of course that wasn’t going to happen so I put in a 5 mile walk. I’ve had knee issues before but apparently just taking some time off isn’t working like it had in the past. It makes for a very depressed me. I have 20 miles coming up as well as a half marathon in the next two weeks and I really need to figure out how to accomplish both. I’ve only got 7% left to go on my fundraising. Sweet Potato Fries

Sweet Potato Fries

Ingredients:

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 tablespoon vegetable oil
  • 2 large (about 1 1/2 pounds) sweet potatoes

Directions:

In a small bowl, combine cumin, salt, and pepper. Set aside. Preheat oven to 400 degrees F. Peel potatoes, cut each in half lengthwise, and cut each half into 6 wedges. In a large bowl, combine the cut potatoes, oil, and spice mixture. Toss until potatoes are evenly coated. Bake the fries on a baking sheet, arrange potatoes in a single layer and place on the middle shelf of the oven. Bake until edges are crisp and potatoes are cooked through — about 30 minutes.

  • Offer community services. Among the wide array of programs LLS provides are those that link newly diagnosed patients with trained volunteers and that help young cancer patients return to school after an absence resulting from treatment.
